There are 3 main types of prot monks in the metagame now:
Boon prot: usually used in 4v4 or gvg (for splitting.)
staples:
divine boon
mend condition
reversal of fortune
inspired hex
contemplation of purity
elite energy management (Edrain or Mantra of Recall, personal preference)
optional:
guardian
prot spirit
holy veil
revealed hex
rebirth (pve only)
passive prot (aka 'bonder'): usually used in Heroes Ascent and PvE farming groups.
relies on maintained enchantments to protect party
options:
life bond
life barrier[e]
blessed signet
mantra of inscriptions
aegis
shield of deflection[e]
active prot: usually used in HA or PvE (rarely PvE, as most PvE groups are terrible.)
options:
Restore Condition[e]
Aegis
chanelling
inspired hex
it always depends on what you're using the monk for, and what your other monks in the party are doing. for single-monk groups, you definitely want a boon prot, since most prot monks don't have active healing (otherwise they'd be heal monks .) I usually run the following build in TA:
Guardian (or prot spirit, or revealed hex, depending on the team build)
reversal of fortune
mend condition
inspired hex
contemplation of purity
divine boon
mantra of recall[e]
revealed hex (or holy veil, depending on team build)
